The cold and breezy weather is a perfect companion for today’s 30 Minute Meal, which is being shared with you from JD Kessler, Commercial Lines agent in our Sioux Falls agency. Along with helping business owners with their insurance needs, JD enjoys hiking in the mountains, hiding in goose/duck blinds and spending time with his family at Pickeral Lake at their cabin.
JD says this chili is so easy to make – you literally dump all the ingredient into a pot, let it simmer a bit and then dig in! Another bonus about this recipe is that it’s gluten free.
1 lb. ground beef (browned)
15 oz. can dark kidney beans (drained)
15 oz. can chili beans
15 oz. can tomato sauce
14.5 oz can crushed tomatoes
2 cups chicken broth
Homemade chili seasoning (recipe below)
2 tsp. chili powder
1 tsp. salt
1/2 tsp. ground black pepper
1/4 tsp onion powder
1/8 tsp ground cayenne pepper (or a little more if you want to spice things up!)
1/8 tsp garlic salt
Combine all ingredients into a large pot. Stir together. Heat on medium to high until the chili starts to simmer. Reduce heat to low and simmer for 20 minutes or longer. Here are some ideas for chili toppings – shredded cheese, cubed avocado, corn chips, olives or crushed tortilla chips.
