This wholesome dish has ‘comfort food’ written all over it! Even better, it’s on the table in about 30 minutes and the fresh spinach adds some extra nutrition. Amy says this dish from Taste of Home originally called for ground beef, but she likes to use buffalo instead.
1 3/4 cups uncooked penne pasta
1 pound ground buffalo (or beef)
1 tsp. minced garlic
1 can (15 oz) tomato puree
1 can (14.5 oz) beef broth
1 1/2 tsp. Italian seasoning
1 tsp. Worcestershire sauce
2 cups fresh spinach chopped
2 cups shredded mozzarella cheese
Cook pasta according to directions. Meanwhile, in a large pot, cook buffalo over medium heat until no longer pink. Add garlic, cook 1 minute. Drain grease. Stir in the tomato puree, broth Italian seasoning, Worcestershire sauce, salt and pepper. Bring to a boil. Reduce heat, simmer uncovered for 10-15 minutes until slightly thickened. Add spinach. Cook 1-2 minutes. Drain pasta. Stir into beef mixture. Sprinkle with cheese, cover and cook 3-4 minutes until cheese is melted.
