30 Minute Meal – Mexican Style Goulash

Rachel Peskey from our agency in Huron has taken good ol’ goulash and put a new spin on it!   This recipe has a little more zing and spice than the traditional meat and macaroni mixture.

Ingredients:

1 pound hamburger

1/2 cup chopped red or green peppers (or jalapeno for a little more heat!)

15 oz. can corn, drained

15 oz. can black beans, drained

1 package Rice-a-Roni Mexican style

2 cups water

Crushed red peppers to taste

Shredded cheddar cheese

Sour cream

Directions:

Brown hamburger and peppers.  Add rice, seasoning packet, water, crushed red pepper, corn and black beans.  Mix together and simmer for 15-20 minutes until liquid is absorbed and rice is cooked.  Top with cheese and continue to cook until cheese is melted.  Serve and top with dollop of sour cream.    This recipe is also good served with corn chips or wrapped up in a tortilla shell.
