Tasha Lee, Marketing Director, for American Trust Insurance wants to share a little advice with you. If you want to save time in the kitchen, use a crockpot. It’s great to come home from a long day of work and kid’s activities and have supper ready and waiting! One of Tasha’s favorite meals to make in a crockpot is Mississippi Pot Roast, a recipe she got from her mom. The beef, dry ranch dressing, butter and pepperoncini peppers meld together for dish that both adults and kids love.
1 3-pound chuck roast
12 oz. jar pepperoncini peppers (usually found in pickle isle)
12 oz. pepperoncini juice
1 packet au jus gravy mix
1 package buttermilk ranch dressing (the dry mix)
1 stick of butter
Salt and pepper to taste
Put chuck roast in crockpot. Pour peppers, pepper juice, gravy mix and ranch mix over the roast. Place the stick of butter on top of the roast. Put lid on crock pot and cook on low for about 8 hours. The roast will be fork tender and fall apart when it’s ready.
