Today’s quick and easy meal is brought to you by Martha Diaz who works in our agency in Huron. To her, insurance is not about a policy. It’s about the relationship that’s built with her customers and being there to assist with any insurance needs. She was born in Puerto Rico, but has called Huron home for the past 10 years. This recipe for stuffed mashed potato balls has been passed down to her from her grandmother and mother. She has fond memories of enjoying them as a kid.
Rellanos de Papa
4 Cups Cooked Mashed potatoes
1 lb. of cooked ground beef seasoned to your taste
Oil for your frying pan
3 cups all-purpose flour
1 ½ cups of water
1 package of Sazon
Salt and pepper to taste
Make your batter by mixing the flour, Sazon and water together in a deep bowl. It should be just a tad thicker than pancake batter. Beat the egg and add it to the mashed potatoes. Divide your potatoes in to 6 balls.
Dust your hands with some flour and carefully pat down each potato ball pushing down on the center. Place a tablespoon of ground beef in the center and then carefully fold over the sides to seal the meat in the center. Once all the potato balls are done you can dip them in your batter. Fry over medium heat until golden brown. Enjoy!
