30 Minute Meal – The Perfect Pancake

Today’s 30 Minute Meal recipe is hot off the griddle – literally!    Pancakes have been making taste buds happy since 600 BC!  The ancient Greeks and Romans ate them with sweetened honey.  President Thomas Jefferson was very fond of them too and so is American Trust Insurance’s President, Preston Steele.  He says his famous pancake recipe got handed down to him from his mom Donna.  Preston suggests that if you get bored with plain ol’ butter and maple syrup on top of your hotcakes, try blueberry or strawberry jam,  a few dollops of white chocolate whipped cream or spread on the Nutella or peanut butter.


1 egg

1 1/4 cups of buttermilk

1-1 1/2 tsp vanilla

2 TBS vegetable oil

1 1/2 cups flour

1 TBS sugar

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/4 cup Mountain Dew or 7-Up


Beat liquid ingredients in large bowl making sure to break the egg yolk. Blend dry ingredients in separate bowl and add to liquid ingredients.  Mix all ingredients together using rotary beater or whisk until batter is moistened.  The less mix time the better.  Let mixed ingredients sit at room temperature while your griddle warms up (approximately 10-15 minutes).  Just prior to pouring batter on the griddle, add approximately ¼ cup of Mt. Dew or 7-up to ingredients and mix in, again use minimal mix time.  Once on the griddle, turn the pancakes as soon as they are puffed and full of bubbles.  Turn and brown the other side.  Serve immediately off the griddle with butter and enjoy!

Makes approximately 12-15 fluffy 5” pancakes.
